Peanut protein is the residue of peanut after extracting oil and fat, also known as peanut meal, which is very rich in protein content. The results showed that peanut polypeptide contained 8 kinds of essential amino acids, especially sulfur amino acids. Peanut polypeptides also have good flavor and water retention.
